I think I'd go with red but that might be because it seems familiar. About 1 1/2 inches is good and no more than 2. For small blocks maybe 1 1/4" but I find it harder to stitch the narrower width and have it come out even. The color is something I pick by look. I try different pieces of fabric until one suits me.
